And worse yet I have to admit this is the third time I've done this. And I've yet to address the main problem.
Either the tension is too tight in the pedals, or my right foot is weaker in terms of clicking out. I'm a bit of a pansy with it lately, after having twisted this ankle a few months ago, but this is nothing new.

The people at Shimano have already figured this one out. There is a screw on the pedals that has written under it:
Tension Adjustment
See the blue arrow? That's the tension adjustment screw. That's all I need to do. That's it. It's even marked + and - so no guessing. DO IT!!!
